Description

A simple vegan cauliflower pizza crust with 9 basic ingredients. Crispy on the outside, tender on the inside – the perfect gluten-free alternative to traditional pizza crust.


Ingredients

  • 1 medium-large head cauliflower, riced (6 cups)
  • 1 ½ Tbsp flaxseed meal
  • 4 Tbsp water
  • 1/4 tsp sea salt
  • 3 Tbsp vegan parmesan cheese (or nutritional yeast)
  • 1 tsp dried oregano (or fresh)
  • 1 tsp dried basil (or fresh)
  • 3 cloves garlic, minced (or garlic powder)
  • 1 heaping Tbsp cornstarch (or arrowroot starch)
  • 1 Tbsp cornmeal (or gluten-free flour)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grate cauliflower to create ‘rice’ texture using a grater or food processor.
  3. Boil riced cauliflower for 5 minutes, then drain and cool.
  4. Ring out all excess moisture using a clean dish towel.
  5. Prepare flax egg by mixing flaxseed meal and water, let rest for 5 minutes.
  6. In a bowl, combine flax egg, cauliflower, salt, vegan parmesan, oregano, basil, garlic, and cornstarch. Mix into a dough.
  7. Line baking sheet with parchment and sprinkle with cornmeal.
  8. Shape dough into a crust, keeping it less than 1/2-inch thick with thicker edges.
  9. Bake for 45 minutes, then carefully flip and bake for another 10-12 minutes until firm and golden.
  10. Add toppings and bake an additional 10 minutes until tender.
  11. Serve hot with fresh basil, red pepper flakes, or extra vegan parmesan.

Notes

Crust is best enjoyed fresh and eaten with a fork. It can be baked ahead and frozen. Too much sauce may make it soggy.
